Soft Baguettes

Ingredients

  • 210ml warm water
  • 357g flour
  • 42.5g butter
  • 6g salt
  • 12.5g sugar
  • 3g instant yeast
  • 1 egg

Instructions

  1. Mix water, sugar, salt. Add 10% of flour, then yeast.
  2. Mix in butter and remaining flour.
  3. Knead into a ball, rest 30 min. Divide into 3 balls.
  4. Rest 10 min, shape into baguettes. Proof 50 min.
  5. Egg wash, score, and bake 26-30 min @ 375°F.
